Its not plastic , Its not aluminum, its not thin either. Its thick heavy gauge stainless steel that will hold up better and should last forever. Individual pots will allow you to cool it down faster and transfer it to a cooler location, cover it, etc. You cannot do that with all in one machines. Cooking with aluminum (consuming any contents that has been heated in aluminum) is not good for your health - This is Stainless Steel which does not have the health risks associated with aluminum or plastic. Also Stainless steel will have less taste distortion than other materials.

Stainless Steel will hold up to temperature changes better as it is much stronger than aluminum. Rare Find: You cant find high quality sets like this any more. The Unit has been Tested and the heater works good.
